Egg white pancakes with mascarpone cheese and Scottish raspberries
The high protein recipes is one of my favourite special breakfast dishes for special occasions - but is delicious dessert too! Enjoy!


INGREDIENTS

(One pancake)
3 egg whites
1 tbs coconut flour
1-2 tsp Truvia (or other sweetener)
Dash of cinnamon
Dash of baking powder
1-2 tbs mascarpone cheese
Coconut oil

Raspberry jam:
80 g frozen raspberries
1/4 cup/60 ml. water
1-2 tsp truvia

METHOD

Heat up a pan and add the frozen (ideally Scottish!) raspberries, water and truvia. Let it simmer for 5-7 min until you've got a thick consistency. Set aside.

Whisk egg whites, coconut flour, truvia, cinnamon and baking powder together. Add some coconut oil to a frying pan and add in the pancake mix. Cook on both sides until golden brown. Add the mascarpone cheese and raspberry jam.
