Leeks are related to garlic and onions and they contain many of the same beneficial compounds found in these well-researched, health-promoting vegetables. Add in vitamin C rich lemon and it's win win in a bowl!
Ingredients
1/2 medium lemon
1/2 cloves garlic
1 medium leek
1/2 spring onion
1/4 medium fennel
1/2 vegetable stock cube - Low Salt
250 ml Water
Method
- Segment the lemon, removing the pips and place in pan.
- Wash and slice the leeks, chop the garlic and fennel and put all of these into a pan with the water and the stock cube.
- Bring to the boil and simmer for about 15 mins until all the vegetables are soft.
- Blend in food processor, season and serve in a bowl with the chopped spring onions on top.
